SWEET POTATO BUNS

This week we made sweet potato buns. They were really popular with the children - I bet they'd be a great thing to make at home.
Here is how to do it...
You need
250g sweet potato
250g self raising flour
25g sugar
25g sultanas
50ml milk
Pinch salt
50g margarine
1/4 teaspoon cinnamon

How to do it:
1. Peel and boil potato until soft. Drain and mash.
2. Melt butter slowly on a low heat.
3. Switch the oven on Gas Mark 7 0r 200C
4. Mix together the butter, potato and milk
5. Add sugar, sultanas, flour, cinnamon and salt
6. Knead slightly to form a soft dough
7. Roll out to about 6mm thick
8. Cut shapes with a cutter and place on a greased baking tray
9. Place in the oven for 15 - 20 minutes, until golden brown
10. Place on a wire rack to cool and then enjoy.

Did you like eating the sweet potato buns?

I really enjoyed making the sweet potato buns with the cookery club today. The best part was that EVERYBODY said they tasted good!
Do you think they would be a delicious snack for your lunch box?

Go on try them.

The sweet potato bun was the best food we made because it tasted like cake and I ate it all up while it was warm.
I will definatly cook this with my mum.
